A recipe from Aunt Veronica. She is Filipino; I am hoping she will post more Filipino recipes like pansit or lumpia!
And the recipe:
Ingredients:
meat — chicken, pork, beef
soy sauce
garlic
white vinegar
pepper
Directions:
Adobo( can use chicken, pork, or beef, they are all good
cooked this way)
Equal parts white vinegar and soy sauce( 1/4 c of each is
probably enough for 2-4 chicken breasts, it doesn’t have to
cover the meat, but turn the pieces occaisionally so they get
full flavor). Fresh minced garlic, (this amount varies
depending on how much you like garlic). Fresh ground black
pepper to taste. Combine ingredients. Add pieces of meat.
Bring to a boil and simmer covered until tender(about 20 -30
min for 4 boneless skinless chicken breasts). Be careful not
to boil dry. Serve with rice and put sauce on rice. If you find
the marinade to be to salty you can dilute it with water before
boiling, but I usually don’t. If you want a dryer meat you can
also boil the marinade off once the meat is cooked.
I tried adding chicken broth instead of water to dilute, but this was still too salty. Stick with water for dilution next time!
